Why I Like Pizza

I really like pizza.

Probably an obvious thing to say when you own a pizza catering business, but it's true.

I like eating it, making it, trying new pizza places, and probably talking about it more than I should.

What I love about pizza is how simple it is. Flour, water, salt, yeast, tomatoes, cheese and a really hot oven. There aren't a lot of places to hide, so the little things matter.

Our dough starts the day before and ferments for 24 hours. The next day, every pizza is stretched by hand, topped with a few simple ingredients and cooked in about 90 seconds.

And no two pizzas are ever exactly the same. Each one takes on a little character of its own as it's stretched, topped and cooked.

That's part of what I like about making pizza. It's handmade, from start to finish.

But probably my favorite part has been seeing what happens when we make pizza at a party.

People naturally gather around. Kids want to watch the oven. Someone always asks how hot it gets. Another person wants to know about the dough. Then a pizza comes out, we slice it up, put it down and everyone grabs a piece.

A few minutes later, we do it all over again.

There's nothing complicated about it.

Good pizza, friends and family, and everyone hanging out together.

That's pretty much why I started Costa Crust in the first place.

And after making hundreds of pizzas, I still get excited when a really good one comes out of the oven.

I think that's a good sign.
